120g Chicken Thigh – No Skin (weighed raw)
50mL Exotic Food Satay Sauce
50mL Light Coconut Milk
125g Woolworths Steamed Jasmine Rice
80g Green Beans
60g Cucumber
Instructions
- Place the diced chicken evenly across 2-3 skewers. Cook the skewers in a non-stick pan for 4-5 minutes or until golden. Meanwhile, cook green beans..
- Add the sauce, coconut milk and cooked veggies to the pan and simmer for 5 minutes on low heat.
- Cook the rice as per packet instructions.
- Add the rice to a bowl and top with the chicken mixture and sliced cucumber.
