  • 500g Chicken Thigh (no skin, weighed raw)
  • 6 tsp Cajun Seasoning
  • 3 tsp BBQ Seasoning
  • 30g Tomato Paste
  • 10mL Worcestershire Sauce
  • 10mL Apple Cider Vinegar
  • 10g Honey
  • 120mL Salt-Reduced Chicken Stock
  • 75g Red Onion, sliced
  • 300g Capsicum, sliced

  • 8 Old El Paso Mini Flour Tortillas
  • 50g Light Shredded Mozzarella Cheese

Method

  1. Place the chicken thighs, sliced onion, capsicum, garlic, Cajun seasoning, BBQ seasoning, tomato paste, Worcestershire sauce, apple cider vinegar, honey, and chicken broth in a slow cooker and mix well to combine.
