Ingredients:
- 120g Extra Lean 95% Fat Free Beef Mince (weighed raw)
- 20g Brown Onion
- 3g Minced Garlic
- 50g Grated Zucchini
- 40g Grated Carrot
- 150g Canned Diced Tomatoes
- 60g Canned Lentils – No Added Salt (drained weight)
- 15mL Worcestershire Sauce
- 2 tsp Dried Thyme Leaves
- 120g White Potato
- 20mL Skim Milk
- 20g Shredded Mozzarella Cheese
Method:
- Preheat the oven to 180ºC.
- Cook chopped potato in a pot of boiling water until soft. Drain, add milk and season with salt and pepper. Mash with a potato masher until smooth.
- Meanwhile, heat a non-stick pan over medium-high heat. Add mince, diced onion and garlic and cook until mince is browned. Add vegetables and cook until softened. Season with salt and pepper.
- Add tomatoes, lentils, Worcestershire and thyme to the pan and mix to combine. Transfer to an oven-proof dish and top with mashed potato and cheese. Bake in the oven for 15 minutes or until the cheese is golden.
