  • 120g Chicken Thigh – No Skin (weighed raw)
  • 1/2 tsp Ground Paprika
  • 1/2 tsp Ground Cumin
  • 1/2 tsp Cinnamon
  • 125g Cooked White Rice
  • 100g Canned Diced Tomatoes
  • 30g Red Onion
  • 80g Plain Yoghurt Regular Fat
  • 5g Minced Garlic
  • 15mL Lemon Juice
  • 3g Fresh Mint
  • 50g Cucumber
  • 50g Tomato

Method:

  1. Preheat the oven to 180ºC.
  2. Place yoghurt, 1/4 tsp of each spice, salt and pepper in a bowl. Whisk to combine. Add the chicken and coat with yoghurt mix.
  3. Add the rice, tomatoes, 1/4 tsp of each spice, salt and pepper to an ovenproof dish. Mix to combine and top with the chicken. Place in the oven and cook for 17-20 minutes or until the chicken is cooked through.
  4. Meanwhile, dice vegetables and set aside. To make the yoghurt dressing add yoghurt, lemon, garlic, salt and pepper to a bowl and mix to combine.
  5. Once the chicken is cooked top with yoghurt and vegetables.
