Ingredients (Serves 4)

40g smooth peanut butter

1 whole egg

1 egg yolk

30g brown stevia (or coconut sugar)

1 tsp vanilla extract

15mL skim milk

60g almond flour

1 scoop equ Very Vanilla WPI

½ tsp baking powder

Pinch of salt

20g dark choc chips
Method
Step 1: Preheat your oven to 160°C (fan-forced).
Step 2: In a bowl, whisk together the peanut butter, egg, yolk, stevia, vanilla and milk until smooth.
Step 3: Add in the almond flour, protein powder, baking powder and salt. Stir until a soft dough forms.
Step 4: Fold in most of the chocolate chips, reserving a few for topping.
Step 5: Press the dough into a non-stick skillet or oven-safe pan.
Step 6: Bake for 10–13 minutes, until the edges are golden and the centre is soft.
Step 7: Serve warm—straight from the skillet if you like.
