  • 120g Chicken Breast (weighed raw)

  • 10ml Teriyaki Sauce

  • 60g Capsicum

  • 60g Cucumber

  • 40g Carrot

  • 30g Avocado

  • 30g Wai Wai Vermicelli Rice Noodles

  • 30g Sweet Chilli Sauce

Method

1. Marinate the chicken in teriyaki sauce for at least 20 minutes. Meanwhile, prepare the rice noodles as per packet instructions.

2. Cook the chicken in a non-stick pan over medium heat for 4–5 minutes or until cooked through. Wash and chop the vegetables, then set aside.

3. Fill a shallow dish with cold water and dip one sheet of rice paper into it for about 5 seconds.

4. Lay the rice paper on a flat surface and add the chicken, vegetables, and a small amount of vermicelli noodles. Drizzle with sweet chilli sauce.

5. Fold and roll — fold the right side over the filling, then fold in the top and bottom edges. Roll tightly to form your rice paper roll. Slice and serve with extra sweet chilli sauce for dipping.
