Ingredients

Chicken

  • 120g chicken breast

  • ½ tsp cornflour

  • 2g peri peri salt

  • 1 egg white

  • 20g Rice Bubbles cereal

  • ½ tsp dried oregano

Caesar Dressing

  • 75g Greek yoghurt

  • 15ml lemon juice

  • 5ml Worcestershire sauce

  • 5g grated parmesan cheese

  • 10g Dijon mustard

  • 2g minced garlic

  • Salt and pepper to taste

Salad

  • 50g lettuce

  • 70g tomato

  • 30g diced bacon


How to Make Crispy Chicken Caesar Salad

1. Combine cornflour and peri peri salt in one bowl. Place crushed Rice Bubbles and oregano in another bowl.

2. Coat the chicken in the flour mixture, dip in egg white and coat with the cereal crumb.

3. Cook the chicken in the air fryer at 180°C for 10–13 minutes until crispy and cooked through.

4. Blend the dressing ingredients until smooth.

5. Cook the bacon in a pan until crispy.

6. Assemble the salad by adding lettuce, tomato, chicken and bacon to a bowl. Toss with the dressing before serving.
