Are you someone who loves a sweet breakfast? We think our Banoffee Breakfast Pot recipe is perfect for you.

I got so many comments on my last ‘Day on a Plate’ video asking for this Banoffee Breakfast Pot recipe, so here it is!

This Banoffee Breakfast Pot is super easy to make, and is a great bulk prep brekkie too – I usually prep 4x at the start of the week, making it such a good grab-and-go breakfast option for my busy mornings.

Plus, they taste like dessert – where are all my sweet brekkie lovers at?!

This recipe was inspired by @emthenutritionist over on Instagram – give her a follow, her recipes are incredible!

Ingredients for the banana date caramel, four serves: 

135g Pitted Dates
1/2 Banana
2g Bicarb Soda
1tsp or Vanilla Bean Paste or Vanilla Extract
Pinch of Salt

Ingredients for the Banoffee Breakfast Pot

8x Weet-Bix
400mL Milk of choice (I used Skim)
1.5 Bananas
1/4 of the Banana Date Caramel
640g High Protein Vanilla Yoghurt
2x Squares Milk Chocolate (for grating over the top of each pot)

Method

1. Crush the Weet-Bix and lay in the bottom of each container (2 Weet-Bix per pot).

2. Evenly pour the milk over the Weet-Bix until slightly soggy.

3. To make the banana & date caramel, pour boiling water over the dates along with baking soda. Let them soak for 5 minutes.

4. Drain, then blitz dates in a blender or food processor with blend them with vanilla extract 1/2 a banana, and a pinch of salt.

5. If the mixture is too thick, add warm water in small increments and blend until you’ve found the desired consistency.

6. Spread a generous tablespoon of the banana & date caramel mixture over the Weet-Bix base, layer with banana, and top it off with yoghurt.

7. Grate the chocolate squares over all 4 pots of Weet-Bix, and enjoy!
