Biscoff Protein Scrolls Recipe
Ingredients
Dough:
- 1 ½ cups (200g) Self-raising Flour
- 2 x scoops (60g) equ Whey Protein Isolate – Caramelised Biscuit
- 200g Non-fat Greek yoghurt
- 40g Monk Fruit Sweetener
- Pinch of salt (optional)
Filling:
- 20g Light Butter (at room temperature)
- 2 tbsp Brown Stevia (or adjust to taste)
- 1 tsp Ground Cinnamon
- 3-4 Crushed Biscoff Biscuits
Topping:
- 2 tbsp (16g) of Monk Fruit Sweetener or Icing Sugar
- 50g Light Cream Cheese (at room temperature)
- 1 tbsp (15g) Biscoff Spread (or more to taste)
- Skim Milk or your choice of milk (enough to thin out the topping)
- Extra crushed Biscoff Biscuits for topping
Method:
- In a large bowl, mix the self-raising flour, greek yoghurt, protein powder, monk fruit sweetener, and salt until a dough forms. If it feels too wet, add more flour (1-2 tablespoons at a time) until the dough becomes easier to handle.
- On a floured surface, roll the dough into a rectangle (about ¼ inch thick).
- Spread the butter and sprinkle the brown stevia, ground cinnamon, and crushed Biscoff biscuits evenly over the dough.
- Roll the dough into a log and cut into 12 (or 8 large) even scrolls.
- Preheat the oven to 180°C. Place the scrolls on a lined baking tray and bake for 20-25 minutes, or until golden brown.
- While the scrolls bake, whisk together the icing sugar, light cream cheese, Biscoff spread, and skim milk until smooth and slightly thinned.
- Once the scrolls have cooled slightly, drizzle with the icing mixture and sprinkle extra crushed Biscoff biscuits on top.
