Lasagne Arancini: A Crispy Italian Fusion

Combine the best of both worlds with Lasagne Arancini—a dish that merges the comforting flavours of classic lasagne with the crispy delight of arancini. These golden bites are filled with rich bolognese, creamy bechamel, and gooey mozzarella, making them an irresistible crowd-pleaser. Perfect for sharing or savouring solo!

Ingredients (Makes 12 Arancini)

For the Filling:

  • 150g Extra Lean Fat-Free Beef Mince (raw)
  • 200g Bolognese with Chunky Tomato, Garlic & Herbs Pasta Sauce
  • 120g Risotto Rice (dry)
  • 200mL Salt-Reduced Beef Stock
  • 140g Plain White Flour
  • 35g Lasagne Bechamel Cheese
  • 80g Breadcrumb Mix
  • 80g Panko Breadcrumbs
  • 10g Italian Herb Mix
  • 130g Light Shredded Mozzarella Cheese

Method

  1. Prepare the Risotto Base: Cook the risotto rice in the beef stock over medium heat until all liquid is absorbed, and the rice is tender. Allow it to cool completely.
  2. Cook the Bolognese: In a non-stick pan, brown the beef mince over medium heat. Add the pasta sauce and simmer until thickened. Set aside to cool.
  3. Assemble the Arancini: Take a small amount of cooled risotto rice and flatten it in your hand. Add a spoonful of bolognese and a small piece of mozzarella to the centre. Enclose the filling with the rice, shaping it into a ball. Repeat until all ingredients are used.
  4. Coat the Arancini: Roll each ball in plain flour, dip it in water or egg (if preferred), and coat with a mix of breadcrumbs, panko crumbs, and Italian herbs.
  5. Air-Fry the Arancini: Preheat the air fryer to 180°C. Place the arancini in the basket and cook for 10-12 minutes, or until golden and crispy.
  6. Top with Bechamel and Cheese: Transfer the arancini to an oven-safe dish. Spoon over the lasagne bechamel and sprinkle with mozzarella cheese. Cook for a further 1-2 minutes in the air fryer or grill until the cheese is melted.
  7. Serve and Enjoy: Serve hot with a fresh side salad or marinara dipping sauce for the ultimate experience.
