  • 125g Cooked White Rice

Method:

  1. In a non-stick pan pan over medium-high heat. Sear beef in batches until browned. Transfer to the slow cooker.
  2. In the same pan, cook onion for 2–3 minutes until softened. Add in curry paste. Cook for another 2 minutes until fragrant.
  3. Pour the onion and curry mix over the beef. Add coconut milk, and chopped vegetables.
  4. Cover and cook on low for 6–8 hours or high for 4 hours, until beef is tender and potatoes are soft.
  5. Spoon over rice and top with fresh coriander and chilli (if desired). Enjoy!
