Ingredients:

  • 120g Lean Beef Chuck Steak (weighed raw)
  • 3g Minced Garlic
  • 15g Leek
  • 100g Mushroom
  • 150mL Salt Reduced Beef Stock
  • 1/2 tsp Ground Paprika
  • 5mL Worcestershire Sauce
  • 5g Dijon Mustard
  • 15g Plain White Flour
  • 50g Light Sour Cream
  • 30g Baby Spinach
  • 120g White Potato
  • 30mL Skim Milk
  • 5g Parsley

Method:

  1. Slice mushrooms and leek. Cook mushroom and leek in a non-stick pan over medium-high heat or using the sear function on your slow cooker. Cook until golden. Add diced beef and garlic. Cook for two to three minutes or until beef is sealed. Transfer to slow cooker if using a pan.
  2. Whisk stock, paprika, Worcestershire, dijon and flour together until smooth. Slowly pour into the slow cooker and stir to combine.
  3. Add sour cream, spinach and paprika to the slow cooker. Cook on high for 5-6 hours or low for 7-8 hours or until the beef is tender.
  4. Cook chopped potato in a pot of boiling water until soft. Drain, add milk and season with salt and pepper. Mash with a potato masher until smooth. Serve with beef stroganoff and top with chopped parsley.
