Ingredients (Serves 1):

  • 1 Wholemeal Sandwich Bread
  • 2 Whole Eggs
  • 5g Minced Garlic
  • 10mL Lemon Juice
  • 20g Spinach
  • 40g Cucumber, chopped
  • 15g Feta Cheese
  • 2 tsp Chilli Flakes
  • 60g Plain Yoghurt

Method:

  1. Whip feta and yoghurt as per preference (e.g. using a whisk or food processor).
  2. Cook spinach and rocket in a non-stick pan for 2-3 minutes with garlic and lemon juice, or until the greens are just wilted. Season with salt and chilli flakes (optional), then remove from heat. Mix in chopped cucumber and toss to combine.
  3. Bring a large pot of water to a boil, then reduce the heat to low. Swirl a spoon around in circles in the pot. Add eggs in one by one and cook for around 3 minutes each for a runny yolk.
  4. Add whipped feta, vegetables and poached eggs to a bowl. Toast bread and serve on the side.
