  1. Preheat the oven to 180ºC.
  2. Drain the chickpeas and chop the cauliflower. Add to a baking tray, season with salt and pepper and cook for 20 minutes or until the cauliflower is golden.
  3. To make the green goddess sauce blitz avocado, parsley, mint, garlic, cashews, lemon juice, maple syrup and nutritional yeast flakes. Season well with salt and pepper and blitz until smooth. Add a splash of water if required.
  4. Add roasted cauliflower, chickpeas and rocket to a bowl. Top with green goddess dressing.
