This high-protein take on the traditional Caesar salad is packed with flavour, texture, and that perfect hit of comfort, thanks to golden smashed hash browns. It’s a nourishing, satisfying meal that’ll have you looking forward to every bite.

Ingredients

  • 2 Potato Utopia Crispy Hash Browns

  • 60g Chobani Greek Yogurt – Natural Light

  • 10g Praise 99% Fat Free Mayonnaise

  • 2g Coles Dijon Mustard

  • 2ml Holbrooks Worcestershire Sauce

  • 2g Minced Garlic

  • 10ml Woolworths Lemon Juice

  • 100g BBQ Chicken (skin and stuffing removed)

  • 25g Woolworths Shoulder Bacon

  • 30g Cos Lettuce

Method

1. Cook the crispy potatoes:
Preheat your air fryer or oven to 200°C. Cook the hash browns for 8 minutes to soften slightly. Remove them, cut into halves or thirds, and gently smash each piece with the bottom of a glass. Sprinkle with salt, then return to the air fryer or oven for another 10–12 minutes, until golden and crispy.

2. Prepare the bacon:
Cook the bacon either by baking it in the oven at 200°C for 10–12 minutes, or pan-fry it in a non-stick skillet until golden and crispy. Allow it to cool slightly before chopping into small pieces.

3. Make the dressing:
In a small bowl, combine the Greek yoghurt, mayonnaise, Dijon mustard, Worcestershire sauce, minced garlic, lemon juice, and a sprinkle of salt and pepper. Whisk until smooth and creamy. If the dressing feels too thick, add a splash of water to loosen it up.

4. Build your salad:
In a large bowl, layer the cos lettuce, BBQ chicken, crispy bacon, and most of the Caesar dressing. Toss everything together gently to coat.
Top with your crispy smashed potatoes, drizzle over the remaining dressing, and finish with a few parmesan shavings.
