  • 30g Short Cut Bacon
  • 20g Tomato
  • 1 Whole Egg
  • 20mL Low Fat Mayonnaise

Method:

  1. Bring a pot of water to a boil. Carefully place eggs into the water and cook for 10 minutes (hard-boiled). Remove from water, immediately run under cold water and peel. Mash the egg with mayonnaise, curry powder, salt and pepper.
  2. Smash potato gems into a jaffle maker and cook until crispy.
  3. Remove from press and assemble with curried egg, bacon, tomato and lid. Top with salt, pepper and chives to serve.
