Ingredients

  • 150g Spud Lite Potato
  • 80g Cucumber
  • 5g Chives
  • 10g Dill
  • 10g Spring Onion
  • 60g Short Cut Bacon
  • 60g Greek Yoghurt
  • 5g Lemon Zest
  • 20ml Lemon Juice
  • 5g Minced Garlic
  • 2g Salt

Method

1. Cook the Potatoes:

Boil the potatoes in salted water until fork-tender.

Preheat the oven to 180°C, then squish each potato flat onto a lined baking tray.

Bake for 15 minutes or until golden and crispy.

2. Prepare the Bacon:
