- 30g Avocado, diced
- 40g Edamame, shelled
- 30ml Lemon Juice
- 2g Minced Garlic

Method:
- Heat the grill to 180ºC.
- Coat rice in soy sauce, and sesame oil and top with chilli flakes. Add to an oven-proof tray and place under the grill. Cook for 20-25 minutes, stirring every 5 minutes until crispy.
- To make the dressing, whisk together lemon juice, garlic, maple syrup, salt and pepper.
- Combine all vegetables, herbs, and peanuts. Top with the crispy baked rice and drizzle with the dressing. Mix to combine and serve.
