Ingredients

120g chicken mince, weighed raw
30g vermicelli rice noodles
50g white cabbage
40g grated carrot
20g red onion
40g cucumber
5g fresh mint
10ml soy sauce
5g minced garlic
5g brown sugar
5g sriracha sauce
10ml rice wine vinegar
10ml lime juice
10g crushed peanuts
5g fresh red chilli
Salt and pepper, to taste


How to Make a Chicken Spring Roll Bowl

Cook the Chicken Mince
Season the chicken mince with salt and pepper. Heat a non-stick pan over medium heat and cook for 4–5 minutes, breaking it up as it cooks, until browned and cooked through.

Make the Dressing
Add the chopped mint, soy sauce, minced garlic, brown sugar, sriracha, rice wine vinegar and lime juice to a small bowl. Mix well to combine.

Prepare The Noodles and Vegetables
Cook the vermicelli noodles according to the packet instructions. While the noodles cook, wash and chop the cabbage, carrot, red onion and cucumber, then add them to a serving bowl.

Assemble The Bowl
Top the vegetables with the cooked vermicelli noodles and chicken mince. Pour over the dressing and finish with crushed peanuts and fresh red chilli.

Toss and Serve
Toss everything together until well combined and serve immediately.
