Passionfruit Pavlova Rocky Road

This Passionfruit Pavlova Rocky Road is a tropical twist on a classic treat, combining the tang of passionfruit with creamy white chocolate, crunchy biscuits, and soft marshmallows. Perfect for entertaining or as a sweet indulgence!

Ingredients

  • 15g White Choc Melts
  • 10g Mini Meringues
  • 2g Dried Mango Slices
  • 2 Marshmallows
  • 1 Arnott’s Scotch Finger (50% Less Sugar)
  • 10g Passionfruit Pulp

Method

1. Melt the Chocolate:

Place the white chocolate in a heatproof bowl over a saucepan of simmering water (double boiler method). Stir until smooth and completely melted.

2. Prepare the Mix-Ins:

Cut the marshmallows, mango slices, meringues, and biscuits into smaller chunks for easy mixing.

3. Combine the Ingredients:

In a large bowl, pour the melted white chocolate over the prepared ingredients (except the passionfruit). Gently mix until everything is coated in chocolate.

4. Assemble the Rocky Road:

Line a small baking tin with baking paper. Transfer the mixture to the tin, spreading it evenly. Press it down gently with a spatula to pack it together.

5. Add the Finishing Touch:

Drizzle the passionfruit pulp over the top for a burst of tangy flavour.

6. Set and Slice:

Place the tin in the fridge for 1-2 hours, or until the rocky road is firm. Once set, remove from the tin and cut into squares.
