Ingredients:

  • 125g Cooked White Rice
  • 20ml Soy Sauce
  • 10ml Sesame Oil
  • 2g Chilli Flakes
  • 15g Spring Onion, finely chopped
  • 5g Fresh Mint, chopped
  • 5g Crushed Peanuts
  • 50g Cucumber, diced
  • 30g Avocado, diced
  • 40g Edamame, shelled
  • 30ml Lemon Juice
  • 2g Minced Garlic
  • 5ml Sugar-Free Maple Syrup
  • Salt and Pepper to taste

Method:

  1. Heat the grill to 180ºC.
  2. Coat rice in soy sauce, and sesame oil and top with chilli flakes. Add to an oven-proof tray and place under the grill. Cook for 20-25 minutes, stirring every 5 minutes until crispy.
  3. To make the dressing, whisk together lemon juice, garlic, maple syrup, salt and pepper.
  4. Combine all vegetables, herbs, and peanuts. Top with the crispy baked rice and drizzle with the dressing. Mix to combine and serve.
